Garden Pepper Pizza's

 
 
It's summer and the garden harvest is giving you lots of peppers and tomatoes.  What do you do with them all?  I have the answer.
 
This makes the best tasting, fresh lunch that you can imagine.  The taste is incredible!
 
Here's your cast of ingredients:
 
 

Half way through making it I decided to use fresh herbs because they were in my garden and everything else was fresh.
 
 
Chop up all the peppers, tomatoes, onion, garlic, basil and oregano.  Combine in a bowl.

 
We love to shred our own Parmesan cheese.  It just taste's so fresh.  Add that to the bowl.


Rub some olive oil on your Joseph's brand pita breads.

 
 
Top each pita with your pepper mixture and bake in a preheated 350 degree oven for 20 minutes.
 


 
These turn out so good.  The vegetables are so fresh tasting and the pita gets nice and crispy.  We serve these with a 1/4 serving of the Fat Stripping Frappa for some extra protein since there's not much in the recipe.

Garden Pepper Pizza
 
Ingredients:
 
4 Joseph's brand pita breads
4 tsp. Extra virgin olive oil
1/2 cup chopped green pepper
1/2 cup chopped sweet yellow pepper
1/2 cup chopped tomato
1/4 cup chopped onion
4 cloves garlic minced
2 Tbsp. fresh basil chopped
2 Tbsp. fresh oregano chopped
1/4 cup shredded Parmesan cheese
 
Directions:
 
Brush the pitas with the olive oil.  About 1 tsp. per pita.  Add all other ingredients into a bowl and mix. Top the pitas with the pepper mixture.
 
Bake at 350 degrees for 20 minutes or until vegetables are crisp tender.  Serve immediately.  Serves 4
