Strawberry, Blueberry, Jicama Salsa

If you have never tried a Jicama - you must!  According to Pearl Priscilla, one of the authors of "Trim Healthy Mama," a Jicama is a Fuel Pull.  That means you can eat Jicama as an S, E, or FP.  Gotta love foods like that.

I wanted to try it because I had found this delightful recipe for a salsa that used Jicama.  Everyone in my family loved this.

You can make your own chips using Joseph's lavash or a low-carb tortilla.  That would put this in "E" category.  If you want to keep it FP stick to using Joseph's crackers.
