Louisiana Bayou Chicken Pasta - Trim Healthy Mama Style

Today, I made the most delicious meal converted from a Country Cooking recipe book that I have.  I find it fairly easy to convert recipes to make them acceptable for my "Trim Healthy Mama" lifestyle.
 
Everyone in my family really loved this meal.  I hope you'll enjoy it too.
 
As most of you know, I have a large family, so - I will share our proportions.  If you are a smaller family, you will need to decrease all of this.
 
This meal would be considered an Energizing Meal for those following the Trim Healthy Mama lifestyle.
 
First thing you need to do is chop up three cups of red onions.  You could use yellow too, but I like the way the red looks in this dish. 
 

 
Then chop up three cups of celery.


 
Then you'll need 1 1/2 cups of chopped peppers.  I like to use a variety of colors as it makes the dish very colorful.


 
In a large saucepan over medium-high heat, sauté onions, celery and peppers in three tablespoons of olive oil for 3-4 minutes or until crisp tender.


Add three pounds of cubed chicken pieces and 6 teaspoons of garlic powder to the pot.  Cook for 4-5 minutes or until chicken juices run clear.


 
Stir in one 16 oz. jar of salsa with no sugar.  I used a jar of homemade salsa.   Combine 1/2 tsp. of glucomannan with 2 Tablespoons of water in a bowl.  Stir into the chicken mixture.  Bring to a boil; cook and stir for 2 minutes or until mixture is thickened and bubbly.  Add the parsley, salt and hot pepper sauce; mix well.

 
Cook up one box of Dreamfield's Spaghetti noodles.  Cook exactly according to instructions on package to get the best benefits of this fun low carb food.  Mix noodles in with the rest of ingredients.  This serves 10 people.  It is a delicious blend of flavors.

Louisiana Bayou Chicken Pasta
 
3 cups chopped red onions
3 cups chopped celery
1 1/2 cups chopped red, yellow and orange peppers
3 tablespoons olive oil
3 lbs. boneless skinless chicken breasts, cubed
6 tsp. garlic powder
1 jar of salsa with no sugar
1/2 tsp. glucomannan
2 Tablespoons water
3 Tablespoons dried parsley flakes
1 1/2 tsp. sea salt
3/4 tsp. hot pepper sauce
1 box Dreamfield's Hot Cooked Spaghetti Noodles
